oh my chocolate mousse recipe

 

Prep time: 10 minutes


Serves 2

 

Ingredients:

 

·      50g pure chocolate (I use Lindt 90%)

·      1 or 1½ egg white (quantity depends on how light you like your mousse)

·      75g mascarpone

·      A pinch of cream of tartar (to stiffen the egg whites)

·      A pinch of stevia

·      10g powdered erythritol

·      1 tsp vanilla extract

 

Instructions:

 

1. Break the chocolate into smaller pieces and put them into a microwavable bowl.

2. Melt the chocolate either in the microwave (1 or 2 minutes) or ‘au-bain-Marie’. Set aside.

3. Separate the egg white from the yolk (1 or 2 eggs). You don’t need the yolks.

4. Add the cream of tartar to the egg white(s) and mix with a hand mixer on high speed until stiff.         Set aside.

5. Mix the stevia, erythritol and vanilla into the melted chocolate and mix with a spatula.

6. Add the mascarpone and use the hand mixer.

7. Add half of the egg whites and mix with the hand-mixer until evenly brown.

8. Fold in (with a spatula) the rest of the egg whites carefully until it becomes an evenly brown     

             mousse.

 

Optional: serve with strawberries, whipped cream and broken hazelnut.
